Salad of the day! Mediterranean Quinoa salad


1 cup cooked quinoa

1 cup thinly sliced cucumbers

1/2 cup chopped tomatoes

1/4 cup diced yellow bell pepper

1/4 cup chopped red onion

1/2 cup crumbled paneer

1/4 cup sliced olives (optional)

0.5 tablespoon toasted peanuts

2 tablespoons chopped corriander

For the dressing:

¼ cup olive oil

1 tablespoon lemon juice

salt and pepper (as per taste)

mixed herbs (optional)


Toss all ingredients together in a big bowl except coriander. Mix the dressing and add on top. Toss lightly, garnish with coriander.
